Bring on the veggies and cheese, please! I can’t get enough of this open face sandwich that is oh so satisfying. And may I add healthy too! It fills you up without the guilt and it’s easy peasy to make. I could seriously eat this for breakfast, lunch and dinner. Doesn’t matter the time of day, this sandwich makes for a delicious meal anytime!
Before I dive into sharing more about this sandwich, you may want to check to see if you have a good citrus herb salt on hand. It’s not something you typically find at your common grocery store. This may be something you may have to find at a speciality herb and spice shop, farmer’s markets, or online. We shop for spices, herbs, salts, and other speciality flavors all over the place because these types of things can make or break a meal in our opinion. Vegetarian Delight
Serving Size : Recipe is for one serving
Ingredients
fresh baked artisan bread (we pick ours up at a local bread shop)
cottage cheese (we use old home cottage cheese)
fresh radish
cucumber
red onion
arugula
heirloom tomatoes
spinach
citrus herb salt
dill
fresh cracked pepper
Instructions
Drizzle a small amount of olive oil in a pan. Cut a piece of bread and place in pan. You want your bread lightly toasted. While the bread is preparing, chop your spinach, slice tomato, and thinly slice the rest of the vegetables. Next take two heaping spoonfuls of cottage cheese and place in bowl. Mix in citrus herb salt and dill. I usually just take a couple pinches of both. Sprinkle fresh cracked pepper and mix together.
Once the cottage cheese is seasoned, take your warm, lightly toasted bread and spread cottage cheese. Add heirloom tomato and finish layering with the rest of the vegetables. Sprinkle sandwich with fresh cracked pepper again and enjoy!
