I call this a power salad because it is filled with clean deliciousness and protein leaving you feeling satisfied. I especially love this salad because it’s full of lean protein to build help replenish and build good muscle structure and growth.

Power Salad with Quinoa
Serves 4-6 person (or fewer or more depending on how much quinoa you cook)
Prep time : 20-30 minutes (less if you have quinoa pre cooked before putting together)
Ingredients
Quinoa
1 leak
1 can of garbonzo beans,
1 avocado
kale
1 cup feta
olive oil and salt + pepper
Instructions
Start by boiling your serving of quinoa
– while the quinoa is cooking ; wash and finely chop leak, wash garbonzo beans, clean and chop avocado in small cubes, wash and finely chop kale.
After quinoa is cooked add the above ingredients. Add cup of feta. Drizzle with olive oil and sprinkle with salt and pepper to taste. Suggest to use himalayan salt with this recipe.
