Summer is in full swing + hot where we are, as I’m sure for you too! The girls have been having so much fun playing in our beloved backyard cooling off in a $20 blow up pool, whilst eating homemade popsicles poolside. Their favorite recipe I’ve created thus far is pineapple + banana with granola crunch. So we thought we’d better share this recipe with you to enjoy too!
Made with natural fruit and yogurt, this recipe is not only tasty but GOOD for you. Sometimes I’ll add a little bit of vanilla protein powder too, making it a great midday or even post workout snack!
Try it out and let us know what you think!
Pineapple Banana Popsicle
Serving Size : 6
Preptime : 20 minutes + 4-6 hours in the freezer
Ingredients
1 1/2 cup diced pineapple
2 bananas
2 cups plain or vanilla yogurt (we used greek vanilla yogurt)
1/2 cup granola
2-3 tbsp almond milk (could use coconut milk or water too!)
1/4 water
popsicle molds
Instructions
Combine diced fruit + 1/4 cup water (you can use coconut water or almond milk to enhance flavor) and blend until smooth. In a small mixing bowl combine yogurt and almond milk. Mix together until smooth.
Take your popsicle molds and start pouring in the fruit and/or yogurt mix. For this process I layered the two, alternating them until full. Make sure to leave some room to top off with granola. Fill every mold, topping each with granola, and place in freezer for 4-6 hours. Serve when ready.

Enjoy!
