Well I’m finally dusting off the ol’ blog here with a recipe you are going to love. What I love most about this recipe is that it doesn’t take much time to make and the instructions how to make it aren’t fussy. It’s simply a chop + drop into a bowl, mix together and yam bam thank you mam, you have a delicious meal ready to eat! The other thing that I really love about this recipe is it’s packed with healthy, high protein ingredients. I haven’t shared much, other than on instagram, about my fitness journey and what I eat (more about all of this in a new series coming soon) but a large part of my daily nutritional intake is making sure that I’m taking in enough protein. This recipe has a good balance of what I tend to crave often while being a wholesome, healthy option.
You can top this kickin’ chicken salad on tuscan toast or pack it in a tortilla shell for a delicious wrap sandwich. The possibilities are endless +
Kickin’ Chicken Salad
Slowing cooking chicken (depending on how many pounds) 4-5 hours
10 minutes to prepare salad
Ingredients
Slow cook shredded chicken (takes about 4-5 hours depending on amount of chicken you’re using). Our family slow cooks 2-3 pounds of chicken breasts at a time to use for quick meals throughout the week.
Cottage cheese
Frank’s Buffalo Sauce
Green onion
Red onion
Celery
Cherry tomatoes
Parsley
Instructions
The best thing about this recipe is you can prepare it for as big or as little as a serving that you need without much fuss. As long as you have all the right ingredients, the end result will be delicious.
Prepare shredded chicken in crockpot. Season chicken with a salt + pepper. Add water for moisture.
Once chicken is fully cooked and prepared you’re ready to make your kickin’ chicken salad!
Take 2-4 cups shredded chicken, or how every much you’d prefer, add to bowl.
Add 1-2 cups cottage cheese
Add chopped onion (both green and red), cherry tomatoes, and celery.
Add Buffalo Sauce (2-3 tablespoons. more for larger serving sizes)
Mix together + serve!
