It’s that hour where you crave something refreshing and fun in your hands and I have just the drink for you! This is so good, you’ll find yourself back in the kitchen mixing up another one.
My girls LOVE mango smoothies, so I decided to try it as a fun mocktail for a pre-dinner treat. All you need is some sparkling water, pineapple juice, and a fresh mango. You could also use canned or frozen mangos too, whatever you have on hand.
I loved how this drink turned out. In fact, it may be my favorite one I’ve shared here thus far. The girls LOVED it too, which is always a bonus. And Aaron enjoyed one as well. Only he spiked his with a little bit of tequila and made a delicious (I wouldn’t know… but he claims) margarita out of it.
Another happy hour on me!
Now go find a sunny spot to put your feet up and enjoy!
Mango Pineapple Mocktail
Serves one or many
Prep time : 10 minutes
Ingredients
Mango
Pineapple juice
Sparkling water
Ice
Instructions
Cube 1/2 cup mango and simmer in a small pan with a splash of pineapple juice. You could also put in a food processor or blender to create the puree and mango juice you’ll need. Once the mango is ready, meaning pureed and you have a watery mixture you’re ready to create your drink. Fill your glass with ice. Pour in your sparkling water, about 1/2 full. Pour in your mango mixture (I use about two-three tablespoons). Add a splash or two of pineapple juice. Top off with a little more sparkling water if needed or mango juice. Lightly stir and enjoy!
