Summer is the time I tend to crave fun cocktails. There is nothing like sipping a delicious, refreshing drink whilst sitting on the front or back porch watching my girls play in the yard, swing from the tree, or splash in the pool. It’s my happiest of happy hours as the warmth of the summer sun dances around us and time, for a moment, feels like it stops.
I’ve been exploring and playing with fun ingredients to make yummy mocktails since pregnancy doesn’t really allow for my typical summer drinks. It’s been exciting to discover new flavors and test out how they come together. This drink in particular was a home run and a recipe you should add to your summer bucket list!
Blueberry Mocktail
Serving size : one
Preparation time : 5-15 minutes
Ingredients
1/2 cup blueberries
shot and 1/2 apple juice
shot and 1/2 lemon lime soda (i use Zevia from whole foods)
1/2 – 1 cup soda water
mint leaves
ice
Instructions
Take a 1/4 cup blueberries and place in a small pot with water. Heat on low until blueberries simmer and create a juice. Once juice is present, take blueberries off the heat.
Next, take 3-5 blueberries and place in glass with mint leaves. Add shot of apple juice and lemon lime soda. Muddle the mint leaves and blueberries in the bottom of the glass. once muddled, place ice in class. Fill glass with soda water and lime soda. Add a tablespoon blueberry juice for extra flavor and coloring. Sip and enjoy!
If you like your drinks sweet add more lime soda and apple juice. If you like to keep things more mild, stick to soda water and the shots and 1/2 apple juice and lime soda.
