One of my favorite things to do in the kitchen is play around with ingredients to add to salads. It’s fun creative time for me and I love when I discover one that just works. Where all the ingredients complement one another and the flavors really come together. I also love when a salad fills you up. Like really fills your tummy with long lasting energy and wonderful nutritional fulness that will last you a few hours.
This salad is so rich in lean protein and healthy fats that it will do just that. Fill you up but without slowing you down. And it’s super easy to make too. All you need is the ingredients, of course!
Avocado Spinach Salad
You can simply make a single serving or one that will feed many.
Prep Time: 15 minutes
Ingredients
1/2 avocado diced or cubed
1 cup quinoa
1/2 chopped cucumber
1/4 cup chopped yellow onion
1/2 feta cheese
1/2 pumpkin seeds
Baby spinach (I will finely shop the larger leaves to make them easier to eat)
Arugula
Olive oil
Himalayan salt
Cracked black pepper
Instructions
Finely chop your baby spinach leaves that are larger for easy eating. Place spinach and arugula in a bowl. Cube avocado, finely chop yellow onion, and dice cucumber. Add to salad along with feta cheese and pumpkin seeds and quinoa. Toss the salad so the ingredients flow throughout. Drizzle olive oil, approximately 1-2 tablespoons depending on size of salad. Be careful not to drench your salad. Sprinkle Himalayan salt and cracked black pepper.
